Today, I'm so excited to have Meredith from ReadySetEat here.  I'm a bit of a recipe fanatic.  I tend to read cookbooks like novels, so when Meredith contacted me about doing a recipe guest post, I jumped at the opportunity!  I'm always on the lookout for new, easy, crowd-pleasing recipes.  Check out what Meredith has for you today.

Quick One Dish Dinner: Italian Pasta Skillet
We’ve all been there: dinnertime rolls around and you realize you have absolutely zero idea what you’ll be making. On busy days, meals tend to sneak up on you when you least expect them, which can make dinner more of a stressful time of day than an enjoyable one.

If dinnertime gives you a headache more often than not, don’t worry! There are plenty of speedy, easy recipes for dinner out there that don’t require a lot of time, planning or pricey ingredients. To save time in the kitchen on busy evenings, keep your pantry stocked with dinnertime basics like chicken breasts and pasta, and look for recipes that don’t require much prep time. In houses full of kids, most parents don’t have extra time to spend chopping, peeling or slicing anyway!
Meals that can be cooked in a single dish or pot are also good ones to gravitate toward when you don’t have much time on your hands. From casseroles to quick skillet suppers, one dish meals make it easy to toss your ingredients together in a flash, and they’ll save you time on clean up, too.
This easy Italian Pasta Skillet recipe is perfect for days when you completely space on dinner ideas or simply don’t feel like spending too long in the kitchen. Since it calls for ingredients that you probably already have in your pantry or fridge (pasta, tomato sauce, sausage, spinach, cheese) it’s also a great recipe to whip out for unexpected guests. Try it out on your next busy evening and enjoy!

Italian Pasta Skillet
Prep Time: 10 min
Total Time: 30 min
Serves: 8
  • PAM® Original No-Stick Cooking Spray
  • 1 pound Italian turkey sausage, casings removed
  • 1 14.5 oz. can Hunt’s® Diced Tomatoes with Basil, Garlic and Oregano, undrained
  • 1 8 oz. can Hunt’s® Tomato Sauce – no salt added
  • 1¼ cups hot water
  • 8 ounces dry multigrain farfalle pasta, uncooked
  • 1 package baby spinach leaves
  • ½ cup shredded part-skim mozzarella cheese
Spray a large skillet with cooking spray; heat over medium heat. Add sausage; cook until crumbled and no longer pink, stirring occasionally. Drain.
Stir in undrained tomatoes, tomato sauce, water and pasta. Bring to a boil. Reduce heat, cover and simmer for 15 minutes or until pasta is tender, stirring occasionally. Add spinach; cook and stir until spinach wilts. Sprinkle with cheese. Serve with a big green salad and crusty bread.
