No-Bake Berry Cheesecake

The red, white, and blue continues today here at Blissful Roots.  I know Tuesday is usually my printable day, but I'm going to save that for Thursday.  Today, instead I have a yummy, easy, summer dessert.

I can't seem to buy enough berries this time of year.  My local grocery store has strawberries, blackberries, and raspberries 3 for $5 this week (what a deal!), so we've been on a berry-eating spree these past few days.

This recipe comes from my mom.  We love to eat at a place called Juniper Take Out, and they have a cheesecake similar to this.  I'm not exactly sure where my mom got this recipe from, but it's a keeper!  The cheesecake filling is so, so easy, and pairs perfectly with any berry/berries you like.

You can buy a pre-made graham cracker crust and serve the cheesecake that way, or the individual jars are always cute.  I used Our Best Bites graham cracker crust for my jars.
