Homemade Seeded Crusty Bread

Well, once again a trip to my parents' house meant lots of yummy recipes.  You should have seen us Monday.  We had homemade bread, triple berry jam, chia seed pudding, Grandma Rae's fruit cocktail, salmon, roasted potatoes, and asparagus going.  The time seems to fly by when we're there, and before we know it, it's time to go.  So we're usually cooking up a storm the day we leave.  It's a bit crazy, but we get a TON done! 

I'm sure you've sure seen, heard of, and maybe even made the no-knead rustic crusty bread recipes that seem to be quite popular these days.  My in-law's neighbors started bringing loaves to them awhile back, and we all fell in love with them!

My mom had this particular bread at her neighbor's house, and when she got the recipe from her we found out it came from Janet at Simply So Good.  You can click here for her recipe, and then click here for amazing mix-in ideas to add to the bread.  So many fun possibilities! 

My mom's neighbor added some seeds to her bread.  Nothing like adding a bit of healthiness to something that's already delicious.  She added:

1 Tbsp.  sunflower seeds

1 Tbsp. quinoa

1 Tbsp. flax seed

1 Tbsp. sesame seeds

You can dump in all the seeds as they are, or you could pulse/chop them. We pulsed the flax seeds, did a rough chop to the sunflower seeds, and then put the sesame seeds on top.  We did just throw the quinoa in without doing anything to it.  You can do as you'd like.  If you like the big seeds in your bread, (I do, but my boys don't) then just throw them in as is.

My husband is not a bread or sandwich guy, but with this bread, he'll eat just about anything on it.  Yesterday's version was ham, Swiss cheese, mayo, and sour kraut on the toasted bread.  He gave me a bite, and it was actually amazing!  And I don't even like sour kraut.

So, get Janet's recipe, and then try adding these seeds to the dough.  The bread can totally stand on its own, but I love this version even more.  It really is amazingly good!  It's best fresh out of the oven, but makes great toast, sandwiches, and is heavenly with homemade jam.
